What a solemn way to end a beautiful weekend. My prayers are with the people of Orlando….in my opinion this was not a hate crime….it was a crime against America. These terrorist cannot stand that we live in freedom…they despise our freedoms…When they attack a particular group of our country they are attacking all of us. What they want to “kill” is our beliefs…and the only way to combat them is to stand together as one nation under God. Prayers….

We are starting a fun outdoor project today with our local carpenter Bob. He is starting a pergola on our side porch….I will share some pics as we progress:)

For today….I wanted to share an easy and healthy summertime dessert that makes great use of all those fresh berries:)

This will be your go to dessert this summer….fresh berries, just enough sweetness…a touch of butter and crunchy graham cracker. Low sugar low cal dessert that taste just like a pie with none of the guilt. You can substitute any berries you may have on hand….I am going to try this with strawberries soon:)

Graham Cracker Blueberry Crisp Recipe

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4

Ingredients
  

  • 1.5 C fresh blueberries
  • 1/3 C sugar
  • 1.5 T flour or cornstarch
  • zest of one lemon and 2 T juice
  • Topping:
  • 5 Graham crackers crushed up or 3/4 C crumbs
  • 1 T sugar
  • 1/2 t cinnamon
  • 1/4 t ginger
  • 2 T melted butter

Instructions
 

  • Toss berries in flour mixture spread into a buttered dish. Top with topping. Bake 350 for about 20 minutes. Serve up with some vanilla ice cream:)
