beach dreamin cocktail…

This past week…on the beach had me dreaming of summer time. The seagulls cackling away in the salty breeze with the waves crashing against the shore….I could listen to that all day long. I have always enjoyed our lakehouse….but it will never come close to my deep love for the ocean and this little beach house on the shore. Of course…after a restful day on the beach…you want to come home to a sweet cocktail (or better yet, enjoy one of these on the beach…that is a win win;) There really is nothing to making this cocktail…it takes zero skill. But I wanted to share it with you in case you haven’t tried it before. The best part about this cocktail….70 calories;) That means you can have a couple…right?? Just get yourself a bottle of SkinnyGirl Island Coconut and some sprite zero. One shot vodka over lots of ice, pour in Sprite Zero. Garnish with cherry or lime if you are feeling extra special:) Can you imagine enjoying this….by the pool…or on the beach…in Puerto Rico? I have told you a couple times about my love for the islands of Puerto Rico. It is a cinch to get there (No passport required)…the plane ride is quick….the sun shines the better part of the year….and the people are incredibly friendly. Bill and I cannot wait to go back again….I will be requesting one of these while I am there. If you are planning a get away….I would urge you to consider Puerto Rico….the resorts are luxury on a moderate budget. You will have plenty of fabulous food to chose from too….and you can try your hand at BlackJack while you are visiting. When we visit again…..we want to be sure to visit the Bioluminescent bays and tour the only rainforest under US national park service, El Yunque, and climb to the clouds.
