Clean, simple, homemade eating. This is a mantra for most everyone in January. The holidays and all the sweets they bring are gone and it is time to start eating food again. This is one of those recipes that really isn’t a recipe….and it fits the bill for being simple, homemade, and yummy….
We have a roasted chicken probably 3 to 4 times a month. I have shared with you how to cook a whole chicken in the crockpot…and that is just as good. But what I like about this recipe is it takes just 1 hour and 15 minutes….and about 3 minutes to prepare for the oven. If you haven’t roasted a whole chicken before it is way easier than you think…promise.
All chickens come with the things that were on the outside (gizzards and neck) inside a bag…inside the bird. So what I do…is use my rubber gloves and reach in the cavity…pull out those things and trash them. You don’t want to cook a bird with those things inside….nasty smells will happen for sure. So once you take that stuff out….rinse with cold water.

Simple Roast Chicken
Ingredients
- 4-5 lb chicken
- 3 celery stalks
- 3-5 carrots
- 1/2 onion
- salt and pepper to season
Instructions
- Heat oven 425.
- Place veggies on bottom of roaster pan.
- Place chicken breast side down on top of veggies and sprinkle with salt and pepper.
- Bake 1 hour and 15 minutes. Let sit 15 minutes before you cut it up.
What temp do you cook the chicken at? Looks super easy and delicious! I’m all about simple when it comes to weeknight meals. :)
