I made these around the holiday but I didn’t want to post one more sweet treat recipe. I know that we are all watching what we are eating (cue…crickets…chirp…chirp…) ok…at least we are trying to watch what we put in our mouth. But, sometimes ya just need a cookie. My mom used to make this one at Christmas time every year. This cookie is sooooo yummy….so very random ingredients make for one delicious treat!

 

Beat butter, brown sugar and sugar till creamy.
Sift all dry ingredients and set aside.
Mix in the vanilla and egg. Combine. Then toss in dry ingredients. Ending with raisins, chex and coconut.
Scoop out and place on cookie sheet. Bake at 350 for about 10 minutes.
Ingredients
1/2 C sugar
1/2 C brown sugar
1/2 C butter
1 t vanilla
1 egg
1 C flour
1 t baking powder
1/4 t salt
1 C raisins
1/2 cup coconut flakes
1/2 cup crushed rice chex

Ingredients
  

  • 1/2 C sugar
  • 1/2 C brown sugar
  • 1/2 C butter
  • 1 t vanilla
  • 1 egg
  • 1 C flour
  • 1 t baking powder
  • 1/4 t salt
  • 1 C raisins
  • 1/2 cup coconut flakes
  • 1/2 cup crushed rice chex

Instructions
 

  • Cream sugars and butter. Add in vanilla and egg. Add in raisins coconut and chex. Form into balls and bake on cookie sheet. 350.
