In the fall….I go through a withdraw without tomatoes…I love them so so so much. They are one of those foods that—if stuck on a deserted island…I would take. Morning noon and night…tomatoes! Love them! Here is a super quick and easy pasta…perfect for a summer night!

Chop up about 3 tomatoes….

Boil your favorite pasta…and drain. Toss in tomatoes, and some cubed up fresh mozzarella. Toss all ingredients together. Splash in about 2 T olive oil and 1 T red wine vinegar. Toss again. Salt and pepper to taste! Serve and savor the goodness!
