My Mom’s chicken salad is a summertime staple in our house….I make it often. It is super simple–nothing fancy…but so so so good. Fabulous on a fresh kaiser roll, little salt and pepper and some chips. Screams summertime right?!?! I love you mom…and I really love your chicken salad ;)

I didn’t have any rolls….so I ate it with some crackers :)

4 stalks of celery, half an onion,3 chicken breast cooked, about a cup of mayo (mind you I have never measured when I make this…I eyeball this…trying my best to pass on the recipe :)

chop your onion…

This is about 3 chicken breast, cooked and chopped up…leftover roasted chicken works great!

Place the chopped onion, celerly and chicken in a bowl. Season with salt and pepper. Mix in about 1 cup of mayo. Chill salad in fridge until ready to eat. Will keep about 3 days in the fridge.
