I thank you for your patience while I bake-my-head-off this summer….Aren’t we supposed to bake when the weather is cool and the oven is hot?!?! Why oh why do I feel this need to bake so much lately!!?!
Oh well….here is yet another really really really good breakfast muffin! Thanks for sticking with me….promise to show you something other than just a good muffin…very soon :)

Mix together your dry ingredients…

Chop up your apples…I used Granny smith because that’s what I had :)

Beat an egg, add in your melted butter (I used canola oil). Toss your apples with the dry ingredients. Then add your egg and butter…and your milk.

Scoop into baking cups…I topped mine with some cinnamon sugar….just cause that’s how I roll…

I promise this…your house will smell like the fourth of July and children will flock to devour them :)
Ingredients
1 1/2 cups flour

3/4 cup sugar

1 1/2 tsp. baking powder

1 t. cinnamon

1/2 cup milk

1/3 cup butter, melted*

1 egg, slightly beaten

1 cup finely chopped apples

Heat oven to 375°F.

Combine flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients. Stir just until flour is moistened. Spoon batter into muffin liners.

Bake 18-23 minutes. Let stand 5 minutes.

* Substitute butter with Canola Oil.

  1. wahoo! The perfect end to my EARLY Saturday morning blurry blog fest (ie: sip coffee, stare at blogs, encourage child to watch tv). My toddler woke me up at 5:30 and these muffins (currently in the oven), might just turn my day right around! Thanks for sharing :)
