I know that most of you have probably made these before….but if not—here is a great recipe that comes together in a snap!

Chop up about 8 small/medium red potatoes…mine where cube size…

Melt about 2 Tablespoons of butter, mix in a minced garlic clove….pour over potatoes

Bake for about 40 minutes, covered at 375….holla!! So happy when I see a good carb at the dinner table!! Potatoes have more potassium than a banana…just sayin :)

  1. I make these for may family at least once a week, but I use a packet of onion soup mix instead of the minced garlic clove.

  2. My fav recipe for roasted potatoes, is to cut them up like you did, then coat them with olive oil, salt and pepper well, chopped fresh rosemary, then spread on a baking sheet and roast at 425 for about 30-40 min…..
