Portable food is so cute. Why is that? We are able to shovel more in our pie-hole? Who knows….but these little individual hash brown cups are too cute….they are easy to make and have a wow factor so friends will think you spent hours…when really it only takes a couple minutes. Love that:)
Just a few ingredients and bake time…that is it. You could add in some favorites like peppers, onions…or maybe a little bit more of your favorite cheese. I was trying to keep these on the lighter side…so I didn’t add a whole lot.
Be sure to grease the pan well to allow the cups to release easily. I would suggest patting down the ingredients into the muffin pan so it is packed….and letting them rest 5 minutes after you bake them.

Individual Hash Brown Cup Recipe
Ingredients
- One bag Simply Potatoes 20oz
- 1/2 C parmesan grated
- 4 green onions chopped
- 2 T olive oil
- 1/2 t pepper
- 1 t salt
Instructions
- Preheat oven 350
- Grease muffin pan.
- Toss all ingredients together.
- Press firmly into cups in the pan.
- Bake 55 to 60 minutes.
- Allow to firm up 5 minutes after baking.
- Use sharp knife and loosen around edges. Invert or scoop out onto platter.
