Baked Potato Appetizers

I had a potato…and we were hungry for a snack….so I made this little appetizer. Quick, yummy and good for you!

Place the potato in the microwave and cook through. Slice into thin slices…

On a baking sheet, place potatoes–top with shredded cheese, salt and pepper and some chives.

Broil on low till cheese bubbles and melts. Serve with sour cream :) Yum!
