Thanks to all my new followers and my loyal followers too!!! So happy to read all your emails about the projects that are inspiring you to do some on your own!!! Warms my heart!!! And now another episode of New Meal Monday….

 This is a favorite in our house! So good and really fairly easy!

Crack a couple eggs and whip them up in a bowl…(oh pretty eggs, aren’t they pretty…)

On some wax paper, spread about 1.5 cups of italian bread crumbs….

Take 4 chicken breast and pound them thin…then put them in the egg…

Take them out of the egg and dredge them in the Italian bread crumbs…both sides…
At this point you can wrap them in some wax paper and cling wrap and keep them  in the fridge until it is time to cook for dinner…you don’t have to …but sometimes I like to get the prep out of the way…
Heat the oven to 375. Place some tomato sauce in a baking dish…

Heat about 1.5 cups canola oil in a saute pan. Heat to med/high. When oil is hot (you can test by dropping a tiny amount of bread crumbs in the oil….if it sizzles the oil is ready) Slowly place breaded chicken in the oil.  You can cover loosely with foil to prevent splatter. Leave alone for 3 minutes…flip and cook another 3 minutes. They don’t need to be cooked through because you finished baking the chicken in the oven. They should just be golden brown. Take out of oil and place on top of tomato sauce. Bake in the oven for 20 minutes (or until chicken no longer pink)

When chicken is almost done cooking place some cheese on top and melt (we use provolone or mozzarella). Serve with noodles and salad! Yummo!
