I know—I can almost see my brothers eyes rolling—my Pastry Cornucopia—drives him nuts some of the projects I choose to spend my time on—but he loves me anyway and that is all that matters!
I love making this to place rolls in or crackers…it takes about 15 minutes—even though it looks much harder!
You will need
  • Box of puff pastry sheets (thaw sheets for 20 minutes on counter.)
  • egg white
  • cooking spray
  • parchment paper
  • foil
Cut a sheet of foil about as large as a cookie sheet. Roll up gently from the corner forming a cone.
Pinch the end (do you see a cornucopia yet???)
Ball up about 15 pieces of foil and stuff them in the cornucopia. The pastry will weigh the foil down when you place it on top—so the foil balls inside help keep it shaped.
Lay one piece of the thawed puff pastry on the parchment. Spray with cooking spray. Lay the cornucopia on top and cut out the shape leaving about.5 inch border. Spray the entire foil cornucopia with cooking spray.
Cut the remaining pastry into strips.
Begin layering the strips at the small end, pinching the ends to the bottom pastry piece.
Keep layering all the way up. If you run out before you get to the end of your foil it is ok….after you bake it and it cools you take the foil out so no one will know!
Cover the entire piece with a brush and some egg white wash.
Bake at 400 for 22 minutes.
Let it cool all the way before you try to get the foil out. You will be able to crumble it up and take it out that way.
