I was kind of a Avocado snob. I told myself I didn’t like them…without ever really trying them. That is until my hubby and I were visiting Chicago about 4 years ago. We went to the tippy top of the John Hancock building (the 95th floor actually)…we went to the lounge and looked out on the great city that is Chicago (I heart Chicago so much ). While sipping a couple cocktails the waitress asked if we would like to try some homemade Guacamole. I immediately put my nose up to it….ewww..no..it’s all green and stuff (sounds awesome in your best Paris Hilton impersonation…moving on). Bill, ” oh let’s try it…I love a good Guac…” (he probably did say it just like that) So we had some. OMG….I mean OMG…so flippin yum (highly recommend it if you go there!). I was hooked on fresh Guac from that point on. It made me want to try Avocado’s more often….like in this Green Goddess dip…yummm..and so good for you too! The ultimate party food!!!

1 ripe avocado, halved, pitted and peeled
2 scallions, green and white parts, coarsely chopped
1/4 cup fresh tarragon
1/4 cup fresh parsley
3 tablespoons white vinegar
3/4 cup buttermilk
Salt
Vegetable sticks, for dipping
Directions
Place the avocado, scallions, tarragon, parsley, vinegar, buttermilk and 1/2 teaspoon salt in a blender; puree until smooth. Serve with vegetable sticks.
