Ingredients

  • 2 carrots peeled and chopped
  • 2 celery stalks chopped
  • 1 onion chopped
  • 4 garlic cloves minced
  • 72 oz. can whole tomatoes with juices
  • 14 oz. roasted red peppers drain the oil from jar
  • 4 cups vegetable broth
  • 1/4 cup fresh basil
  • 1 bay leaf
  • Salt and pepper

Instructions

  • Place everything in a large slow cooker and let cook on low all day (8 hours) Blend with an immersion blender and serve. Makes enough to eat all week long!
