Hey yall! Hope you had a wonderful Father’s day! We had a great low key weekend—enjoyed a bit of pool time, family time and chill time:) A few weeks back we got together with some friends and I wanted to whip up a refreshing summer cocktail. This watermelon-tini fit the bill! Obviously the sweeter the watermelon the better….but if you happen to get one that lacks sweet just add a touch of honey. It’s hot….stay cool with a homemade watermelontini:) You’re welcome;)

This recipe will make 2 cocktails…plenty to share….

Watermelon Cocktail (Low cal cocktail)

Prep Time 10 minutes
Total Time 10 minutes
Servings 4 -6

Ingredients
  

  • 2 C chopped watermelon
  • 1/4 C fresh lime juice
  • shot of vodka
  • watermelon slice for garnish
  • ice

Instructions
 

  • Blend the watermelon well and pour into container to keep in fridge.
  • Juice limes and set aside juice in fridge.
  • When ready to make drink...fill rocks glass full of ice....pour in vodka, splash of lime juice and fill glass with watermelon juice. Mix with long spoon. Place watermelon slice for garnish.

I used my nutri ninja to blend the watermelon—a blender or food processor will work as well. Be sure to blend well though.

Perfect to consume outside by the grill:)
